Reshaping it All - Day 63

Welcome back to my kitchen! Today we have "Famous Chopped Salad" (recipe on page 117 in my book) and home-made chicken tenders. One salad is topped with a balsamic dressing, the other is plain.

The chicken tenders are SO easy to make! Please don't buy frozen chicken fingers for your kids. Get boneless, skinless chicken breasts or tenders (some brands cut them slender for this type of cooking).

In three separate dishes fill with 2 or 3 whisked eggs, flour, and bread crumb mixture (the mixture consists of fresh bread crumbs). Take a few slices of sandwich bread or any kind of wheat bread and chop it fine in a food processor, add salt and pepper to taste, shredded parmesain cheese and italian leaf parsley, chopped fine.

Dip your chicken sliver in the flour first to coat, then the egg wash, then the bread crumb mixture. Cook in a pan with about 2 tablespoons of extra virgin olive oil on medium heat until done.
